“We breed Wagyu cattle, everything goes into how they're looked after. The better the quality is reflected from the earlier life on the farm, and for that to happen, I need good quality feed. Now to grow good quality feed we need good quality soil, and the soil has to provide an environment for that to flourish and be sustainable. So if you don't have that, you're going to have poor feed, and then you're going to produce a poor product, and it's not going to taste or appeal, to the consumer as well. So it's all interconnected, the whole thing.”

“What food is, is really where soils at, and having healthy soil means that we can have food, but also have biodiversity and the environment around us thrives from having a healthy soil system. I guess where we would sit is, in wanting to bring people to the farm, wanting people to connect to their food system, looking at ways of connecting directly with where your food is coming from, which is a nice way of finding that connection.”
